chocolate sunshine




here lies the chocolate journals of M.R.P.... where good ideas and sketches lie.




A customer of mine gave me a big bag full of meyer lemons from her son's tree. I infused milk chocolate ganache and piped kisses with it, then dipped the top in white/milk chocolates.


A confection inspired by Ben Prescott: Dark chocolate macadamia nut gianduja, dipped in white chocolate and rolled in toasty coconut. SO delicious!


Guayaki headquarters/roasting plant is right down the street from my house. I have always loved yerba mate, but, upon the first time trying gaucho fuerte yerba mate I fell head over heels in love. It's so earthy and delicious.
I just knew infusing a caramel with the mate, dipping it in dark chocolate and garnishing it with red gold sea salt would put it over the top, and it sure did! They are satisfying.
Also in lieu of the sunshine, I crafted sunflower seed gianduja sunflowers.
