ending summer confections

Summer season has been very busy here in Jenner California. 
Salted Caramels are flying off the shelves!!
Applewood smoked salted vanilla bean caramels:
all organic ingredients~ heavy cream, sugar, honey,
brown rice syrup, butter, vanilla bean, salt.


St. Johns wort has always been a favorite herb of mine...
perfect for foggy days & PMS.
it's mainly used as an antidepressant, so combined with chocolate is a WIN WIN!
I introduce the purple sparkly magic confection!
St. John's Wort double dark truffle:
organic ingredients~ heavy cream, tcho 68% dark chocolate,
st. john's wort tincture
Our immune system can always use boosting.
Elderberry is an immune booster! 
It also has a sour-tart flavor that melds well with dark chocolate and coconut. 
This confection does your body good! 
It's emulsion of coconut oil and chocolate~ 
that creates a sensation that melts in your mouth!
Elderberry coconut melts:
organic ingredients~ coconut oil, tcho 68% dark chocolate,
elderberry tincture, coconut flake, sea salt.

 I am always surprised by how many Mocha drinkers exist.
For them, i created the espresso buttermint. 
A melt in your mouth center with added caffeine boost!
Espresso buttermint:
organic ingredients~ powdered sugar, butter, espresso grinds,
peppermint oil, tcho 68% dark chocolate
Marzipan holds a dear place in my heart....
growing up in europe with marzipan as my mainstay candy.
I love to make it as much as i love to eat it!
Rose almond marzipan:
ingredients~ almond paste, powdered sugar, rose oil

Dried fruit+peanutbutter+chocolate = matches made in heaven!
Gianduja is by far my most favorite confection.

tcho 68% dark chocolate, dried blueberry
Buttercrunch toffee: light, crunchy buttery and delicious!
This one has raw cacao nibs folded in at the end for added crunch!

Hand harvested salt caramels

Living on the Sonoma coast, 
  breathing in the crisp coastal air,
creating coast salted confections.


I recently started hand harvesting pacific ocean salt water from Russian Gulch beach, to make salt.

The process is actually really quite easy. I have been amazed at how most people have 'no clue' that salt comes from the ocean. It is called Sea Salt for a reason, ha ha ha.

 step 1. Boil water
Collected water evaporating


Step 2. Once boiled down to crystal form, lay out to dry in coastal sunshine

The sun up here is so bright! Takes about 2 hours to dry.

And that's it! The flavor of fresh made sea salt is unbeatable. The perfect ingredient to top my vanilla bean caramels!!

Coastal confections

Moved into a new space 900 ft above the ocean on a ridge over looking russian gulch beach & old redwood growth rolling coastal hills. 
Absolutely breathtaking views as I create my confections!



Whisked Roots Confections are now all medicinal herb infused, for added pleasure.
I use 100% organic ingredients and source all local ingredients.
Right now I am using TCHO organic 68% dark chocolate from San Francisco.

Wedding Chocolate Love

On 9-10-11 Mallary and Zachary are tying the knot.
