Hand harvested salt caramels

Living on the Sonoma coast, 
  breathing in the crisp coastal air,
creating coast salted confections.


I recently started hand harvesting pacific ocean salt water from Russian Gulch beach, to make salt.

The process is actually really quite easy. I have been amazed at how most people have 'no clue' that salt comes from the ocean. It is called Sea Salt for a reason, ha ha ha.

 step 1. Boil water

Step 2. Once boiled down to crystal form, lay out to dry in coastal sunshine

The sun up here is so bright! Takes about 2 hours to dry.

And that's it! The flavor of fresh made sea salt is unbeatable. The perfect ingredient to top my vanilla bean caramels!!
